PLUMCAKE
Ingredientes
* 100 g. de pasas
* 75 g. de pasas de Corinto
* 15 cl. de ron
* 210 g. de mantequilla
* 200 g. de frutas confitadas
* 100 g. de cerezas confitadas
* 300 g. de harina
* ½ sobre de levadura química
* 150 g. de azúcar
* 4 huevos
Plumcake con frutas confitadas
· Receta para 6 a 8personas
- Unas horas antes: Lavar y escurrir las pasas y dejarlas macerar en el ron.
- Dejar reblandecer la mantequilla. Cortar las frutas confitadas en daditos de 1 cm. Tamizar la harina con la levadura.
- Precalentar el horno a 250°C.
- En un bol, batir 200 g. de mantequilla con el azúcar hasta que estén bien mezclados, luego añadir los huevos, de uno en uno e incorporar la harina al final. Cuando la mezcla esté homogénea, añadir las pasas con su ron de maceración, luego las frutas confitadas, incorporándolas suavemente con una cuchara de madera.
- Untar con mantequilla el molde de pasteles. Verter la masa dentro.
- Introducirlo al horno y bajar en seguida la temperatura 180°C.
- Hornear durante más o menos una hora y veinte minutos. Verificar la cocción con un cuchillo. Debe salir seco y limpio.
- Dejarlo entibiar antes de desmoldarlo. Cuando esté frio, envolverlo con film transparente.
Este plumcake sabe mejor si se lo deja reposar 4 días antes de degustar. Guardarlo en la nevera. Seguirá estando delicioso durante unas dos semanas.

PLUMCAKE
Ingredients:
100g raisins
75g Corinth raisins
15cl rum
210g butter
200g cristalised fruit
100g cristalised cherries
300g flour
½ leavening
150g sugar
4 eggs
PLUMCAKE WITH CRISTALISED FRUIT
Recipe for 6 to 8 people
Some hours before wash and drain the raisins and leave them to macerate in the rum.
Let soften the butter.Cut the cristalised fruit in dices.Sieve the flour with the leavening.
Preheat the oven at 250º.
In a bowl cream 200g of butter with the sugar until they are well mixed then add the eggs one by one and add the flour at the end when the mixture is homogeneous add the raisins with its rum of maceration then the cristalised fruit incorporating them softly with a wooden spoon.
Spread with butter the mould of cakes pour the dough inside.
Put it in the oven go down the temperature to 180º.
Bake around 1h and 20 minutes check the baking with a knife it has to be dry and clean.
Let it warm up before removing from its mould.When it is cold cover with transparent plastic wrap.
This plumcake tastes better if it is let settled 4 days before being savored. Keep it in the fridge.It will continue to be delicious during 2 weeks.
